And there is no better way to celebrate than with all things pumpkin spice. One of our fave sweet treats this season is this Vegan Pumpkin Mousse Parfait with Lush Gourmet Cinnamon Spice Peanuts! It features simple ingredients, takes 5 minutes to make, and is basically a little taste of Fall in a cup. 


Ingredients (yields two parfaits)


Pumpkin Mousse

1/2 cup coconut cream*
1/4 cup natural pumpkin puree
2 TBSP maple syrup
1.5 tsp pumpkin pie spice
1/2 tsp vanilla extract
Pinch of salt


Dairy-Free Whipped Cream (we love the new Reddi Wip Coconut Milk whipped cream)
Lush Cinnamon Spice Peanuts
Cinnamon (for garnish)


*Do not mix together the cream and the water. Scoop out the cream and discard the water. 



  1. Place all Pumpkin Mousse ingredients into a blender and blend on high until smooth. Do not over blend, as the mixture will become thin. 
  2. Assemble parfait by layering pumpkin mousse, Cinnamon Spice Peanuts, dairy-free whipped cream, and another layer of pumpkin mousse. Top with Cinnamon Spice Peanuts, whipped cream, and a dash of cinnamon.
