It's the fifth and final day of the Lush Nuts Donut series! Today's donut is inspired by our Coconut Orange Peel almonds. It's a delicious coconut donut with chopped almonds and coated with an orange glaze. Since these are baked they're much lighter, but just as delicious as a fried donut. Recipe is as follows:


I once again used this recipe from Broma Bakery as the base, but added 1/3 cup chopped Coconut Orange Peel Lush Nuts and 1/3 cup of shredded coconut. Add these once the mixture has come together and before piping into the donut pan. Follow the recipe and allow donuts to cool, then glaze with the recipe below.



1 cup powdered sugar

2-3 tablespoons  fresh orange juice



1. Whisk together the powdered sugar and orange juice in a bowl until thick. If it's too thin, add more powdered sugar or if too thick add juice. This mixture should be thick enough to coat the donut.

2. Dip the cooled donuts in the glaze and place on a cooling rack to allow excess to drip off. While the glaze is still wet, decorate with toasted coconut flakes, orange zest and Coconut Orange Peel Lush Nuts.
