It's Day 2 of the Lush Nuts Donut series! Today's donut is inspired by our Coconut Lavender almonds. It's a lovely lavender infused donut with chopped almonds and decorated with toasted coconut. Since these are baked they're much lighter, but just as delicious as a fried donut. Recipe is as follows:

 

I once again used this recipe from Broma Bakery as the base, but added 1/3 cup chopped Coconut Lavender Lush Nuts and 1 teaspoon dried lavender flowers to enhance the floral note. Add these once the mixture has come together and before piping into the donut pan. Follow the recipe and allow donuts to cool, then glaze with the recipe below.

 

Glaze:

1 cup powdered sugar

2-3 tablespoons milk (I used Unsweetened  Vanilla Flax milk)

 

Directions:

1. Whisk together the powdered sugar and milk in a bowl until thick. If it's too thin, add more powdered sugar or if too thick add milk. This mixture should be thick enough to coat the donut.

2. Dip the cooled donuts in the glaze and place on a cooling rack to allow excess to drip off. While the glaze is still wet, decorate with toasted coconut flakes, dripped lavender flower and Coconut Lavender Lush Nuts.
